Ham with Skillet Apples and Pecans

spacer 1/4 cup chopped pecans
4 medium apples, peeled, cut into 1 inch pieces
1/4 cup raisins
1/4 cup brown sugar, firmly packed
1/4 cup water
1 tsp cinnamon
2 tsp vanilla
4 slices cooked ham (each slice 5x3x1/4 inch)

Heat 12 inch skillet over medium-high heat until hot. Add pecans; cook, stirring constantly, 3 to 4 minutes or until lightly browned. Immediately remove pecans from skillet; set aside.

In same skillet, combine apples, raisins, brown sugar, water and cinnamon; stir gently to coat apples. Reduce heat; cover tightly and simmer 6 to 7 minutes or just until apples are crisp-tender. Stir in vanilla.

Increase heat to medium-high. Move apple mixture to side of skillet. Add ham slices; cook 3 to 5 minutes or until most of liquid evaporates, turning once.
